Coconut Steamed Rice

Ingredients
2 cups jasmine rice, washed and rinsed
1 tin (400 ml) coconut milk
1 cup water
Stove Top Method
In a medium-sized pot or clay pot, combine the jasmine rice, coconut milk, and water. Stir well to combine.
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to the minimum setting, cover, and let it simmer for 5-7 minutes.
After the simmering time, remove the pot from the heat but do not lift the lid. Let the rice sit, covered, for another 10 minutes to finish cooking.
Fluff the rice with a fork before serving.
Rice Cooker Method
Place the rinsed jasmine rice, coconut milk, and water directly into the rice cooker. Stir to combine.
Set the rice cooker to the "white rice" setting or the standard cook setting, and let it cook until done.
Once the rice cooker switches to the "keep warm" setting, let the rice sit for an additional 10 minutes.
Fluff the rice with a fork before serving.
