Awesome video, Jeremy! Concise and well edited. I do the exact same thing for soft boiled eggs but I cut them using a fine string like fishing braid line. Sometimes the yolk catches on the blade and drags but I'll definitely try your wet knife trick.

Get water to rolling boil, gently place eggs in water, set timer to 7.5 mins— remove and chill with ice immediately.
